Gluten-Free Chicken Parm That Tastes Like the Real Deal

Chicken Parm was one of the hardest goodbyes after getting diagnosed.
Every time I saw it on a menu, it felt like a little heartbreak.
So I made my own — and honestly? It’s even better. Crunchy on the outside, juicy inside, and topped with just the right amount of sauce and cheese.
The kind of meal that makes you remember you’re allowed to eat for joy.

🥣 Ingredients (serves 2–3)

  • 2 boneless, skinless chicken breasts, butterflied or pounded thin

  • ½ cup Caputo Fioreglut gluten-free flour (or any certified GF flour)

  • 2 eggs, beaten

  • 1 cup gluten-free breadcrumbs (I love 4C, Aleia’s, or homemade)

  • ½ cup grated Parmesan cheese

  • 1 tsp garlic powder

  • ½ tsp Italian seasoning

  • Salt + pepper to taste

  • 1 cup marinara sauce (check label for GF)

  • 1 cup shredded mozzarella cheese

  • Olive oil for frying

InstructiOns

  1. Prep the dredging station:

    • Bowl 1: Caputo flour

    • Bowl 2: Beaten eggs

    • Bowl 3: Breadcrumbs + Parmesan + garlic powder + Italian seasoning + salt + pepper

  2. Coat the chicken:

    • Dip each piece in flour (shake off excess), then egg, then breadcrumb mix.

    • Press gently to help crumbs stick.

  3. Pan-fry:

    • Heat olive oil in a large pan over medium heat.

    • Cook chicken 3–4 minutes per side until golden and crispy.

    • Transfer to a paper towel to drain.

  4. Assemble:

    • Spread a thin layer of marinara on a baking dish.

    • Add chicken, top with more sauce and mozzarella.

  5. Bake:

    • 400°F for 10–12 minutes until cheese melts and bubbles.

  6. Serve:
    Over gluten-free pasta or with a side of greens.
    (And yes, eat it straight from the pan — you’ve earned it.)

Double-check that your breadcrumbs, marinara, and cheese are all certified gluten-free. If you’re cooking in a shared kitchen, use separate utensils, oil, and baking trays. Cross-contamination is sneaky — don’t let it ruin your masterpiece.
